The masks appear to make the images more blurry, with larger masks resulting in more blurry images.

The smaller masks allow you to compute information from each pixel locally. Conversely, using large masks would allow a computation from a wider area for each pixel, but information in the image may be lost.

You might use a mask like [-1, -1, -1; 0, 0, 0; 1, 1, 1]. This would ideally remove same-coloured areas and leave a horizontal region where the horizon changes colour.
