A bit can take on one of two values, either zero (0) or one (1). (This can also be thought of as on or off, true or false.) A byte is a string of eight bits, such as 00000000 or 10110111. There are exactly 256 different such strings. A single byte, then, can represent any value from 0 (which is 00000000) to 255 (which is 11111111).
